Yummy and good for you!



Daylight savings time really threw us off today. We woke up late and at least for me, the day just got worse as it went on. So, this is a really quick and easy recipe we threw together tonight after a long Monday at work. I didn't have high expectations for it as it comes with the "healthy" label but it was surprisingly good. Even Shane ate it and liked it! Best of all, I think it took a grand total of 5 minutes (if that) to get in the oven. We will definitely be adding it to the rotation.



Baked Shrimp in Lemony Garlic Sauce

1 1/4 pounds shrimp
2 tablespoons butter, melted
1/4 cup fresh lemon juice
3 garlic cloves, minced
1 teaspoon worcestershire sauce
3/4 teaspoon lemon pepper
1/4 teaspoon ground red pepper
2 tablespoons parsley

Preheat oven to 425 F.

Arrange shrimp in a single layer in a 13x9 baking dish coated with cooking spray. Combine lemon juice, butter, garlic, worcestershire sauce, lemon pepper and red pepper in a bowl. Pour over shrimp. Mix to coat.

Bake for 8-10 minutes. Sprinkle parsley over shrimp and serve immediately.
